Of the four (well-known) musical geniuses that lived in Vienna at the same time - Haydn, Mozart, Beethoven and Schubert - only Franz Schubert was truly Viennese, by birth as well as temperament. After his premature death, some of his finest scores - never performed in his lifetime - were used to wrap sausages by a local butcher. That is Viennese, too.
